The Perfect Sunday Brunch!
If you follow us, then you know that we love a good tasty brunch at the weekend (because why wake up any earlier on a Saturday or Sunday?!...)
This Sunday we trialled a new brunch and enjoyed every mouthful, so we thought we'd share it with you.
Homemade crispy hash browns (half sweet potato & half white potato) with cheesy scrambled eggs topped with slices of avocado, jalapeño & coriander!
(Perfect with Cholula hot sauce on the side)

Ingredients
Hash Browns:
1 small onion, grated
1 small baking potato, peeled & grated
1 small sweet potato,
1 small sweet potato,
1 teaspoon salt
Freshly ground black pepper
4 tablespoons extra-virgin olive oil
2 minced garlic cloves
Cheesy Eggs:
Splash of semi-skimmed milk
3 large eggs
1/2 teaspoon salt
Freshly ground black pepper
1/2 tablespoon of coconut oil
1 slice of montery jack cheese
Garnishes:
1 avocado, sliced
Chopped coriander
1 jalepeno, sliced
Cholula hot sauce

Tip: We used a Tefal machine to grate the potatoes, making it super quick (but dont forget to drain out the water in the potatoes by wrapping them in a clean towel and squeezing the liquid out).
